Can you tell the difference?

Having foraged for horsetail in both urban and mountain environments, I've noticed a difference in their appearance. While the mountain-grown horsetail looks lush and tightly structured, its urban counterpart looks 'razzled' and stressed.

If environmental conditions can so clearly alter a plant’s physical state, what makes us think we aren't being affected in exactly the same way?
