Ingredients:
1 cup Cottage Cheese - full fat
12 eggs
1.5 cup Spinach
1/3 cup Feta cheese
1/4 tsp salt
1/4 tsp pepper
1 tbsp Fresh Oregano
1/2 tsp fresh garlic
1/2 cup sliced peppers
1/3 cup grated cheddar cheese
Instructions:
Preheat the oven to 400°F (200°C). Coat the dish with some herb butter.. Set aside.
Roughly chop the spinach leaves, peppers, garlic, and oregano. Set aside.
In a large mixing bowl, whisk the eggs, cottage cheese, feta cheese, pepper, salt, garlic, grated cheddar, and oregano.
Stir in sliced peppers and chopped spinach.
Pour the egg mixture in the prepared pie plate.
Place the pie plate on the middle rack of the oven and bake for 15-25 minutes or until the eggs are set and the center is not jiggly.
Remove from the oven, and let it cool for 10 minutes before slicing.
