Cheesy Egg Bake


1 cup Cottage Cheese - full fat

12 eggs

1.5 cup Spinach

1/3 cup Feta cheese

1/4 tsp salt

1/4 tsp pepper

1 tbsp Fresh Oregano

1/2 tsp fresh garlic

1/2 cup sliced peppers

1/3 cup grated cheddar cheese


  • Preheat the oven to 400°F (200°C). Coat the dish with some herb butter.. Set aside.

  • Roughly chop the spinach leaves, peppers, garlic, and oregano. Set aside.

  • In a large mixing bowl, whisk the eggs, cottage cheese, feta cheese, pepper, salt, garlic, grated cheddar, and oregano.

  • Stir in sliced peppers and chopped spinach.

  • Pour the egg mixture in the prepared pie plate.

  • Place the pie plate on the middle rack of the oven and bake for 15-25 minutes or until the eggs are set and the center is not jiggly.

  • Remove from the oven, and let it cool for 10 minutes before slicing.
