GF Double Chocolate Granola Bars


1/2 cup honey

1/3 cup coconut oil

2 Tablespoons vanilla

1 pinch of salt

3 cups GF rolled oats

1/4 cup mini chocolate chips


  • Combine honey and coconut oil in a medium pot. Bring to a simmer, and once pot starts bubbling up all over, start the time for 1 minute.

  • When the time is up, remove from heat and stir in the vanilla, salt, cocoa powder. Let it cool down for 10-15 minutes.

  • While the pot is cooling, prepare a 9x9 inch baking dish with parchment paper.

  • After the mixture has cooled for 10-15 minutes, stir in the oats and chocolate chips.

  • Press the granola bar mixture into the pan, hard. You want to do multiple rounds with your spatula. Spraying the spatula or back of a spoon will help to push the granola down.

  • Cool in the fridge for 4 hours or overnight, before slicing bars.
