GF Rhubarb Brownies

1 cup sugar

1/2 cup olive oil

2 large eggs

1 tsp vanilla

1/2 cup GF flour

1/3 cup cocoa powder

1/2 tsp baking powder

1/2 tsp salt

1 cup rhubarb

1/2 cup chocolate chips (optional)


  • Preheat oven to 375 degrees. Line an 8x8 inch baking pan with parchment paper and lightly spray with your cooking spray choice.

  • In a bowl whisk together the sugar, oil, eggs and vanilla

  • In another bowl whisk together the flour, cocoa powder, baking powder, and salt.

  • Stir the wet ingredients into the dry ingredients and mix until just blended.

  • Add in the rhubarb and chocolate chips (optional) and mix until the are combined. The batter will be super thick.

  • Pour into the pan and spread the batter.

  • Bake for 25-30 minutes, or just until a toothpick inserted comes out clean.

  • Remove brownies from the oven and let them cool. Once cooled cut into squares.
