Ingredients
1 cup sugar
1/2 cup olive oil
2 large eggs
1 tsp vanilla
1/2 cup GF flour
1/3 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 cup rhubarb
1/2 cup chocolate chips (optional)
Instructions
Preheat oven to 375 degrees. Line an 8x8 inch baking pan with parchment paper and lightly spray with your cooking spray choice.
In a bowl whisk together the sugar, oil, eggs and vanilla
In another bowl whisk together the flour, cocoa powder, baking powder, and salt.
Stir the wet ingredients into the dry ingredients and mix until just blended.
Add in the rhubarb and chocolate chips (optional) and mix until the are combined. The batter will be super thick.
Pour into the pan and spread the batter.
Bake for 25-30 minutes, or just until a toothpick inserted comes out clean.
Remove brownies from the oven and let them cool. Once cooled cut into squares.
