Lilac Honey

Once you have gathered your lilacs, you will want to prepare the florets for use. This is the most time consuming part of the recipe.

After preparing the florets, fill a 4 ounce jar with the florets and then pour over local honey. Using local honey has so many amazing benefits plus, building relationships with local farmers holds a special place in my heart.





Once you have poured the honey into the jar, make sure that it fully covers the flower. Place lid on the jar and store in a cool, dark place for about 30 days. Make sure to turn the jar every few days to move the honey and the florets about coating every part of the flower.





After 30 days, your honey is ready to use. You may strain the flower of keep it in the honey and use. I like to keep the flower in to remind me of the beauty every time that I use the honey. Enjoy!
