Nettle Pesto

3 C fresh nettle leaves

4 garlic cloves

3/4 C smoked almonds

1/4 C Olive oil

1/2 tsp sea salt

1 T lemon juice

Instructions: Pesto is best made with a mortar and pestle or you may choose to make in a food processor.

~First add in the toasted pine nuts and crush lightly.

~Add the garlic and pound a few times or pulse a few times in the processor.

~Add the salt, nettle, and cheese (alternative) and pound (pulse in processor).

~Mash everything together stirring with the pestle and mashing. (If using a processor combine all ingredients but don't make into a paste)

~ Start adding in oil. Adding in a tablespoon at a time and stopping when it reaches the consistency you desire. (If you are making a spread, use less oil than you would if you were making a sauce)
